UNIQUE FLAVOR FROM TRADITION TO TABLE: ÇINTAR ROASTING
Milas Chamber of Commerce and Industry Chairman of the Board Reşit Özer explained the place of Milas Çıntar Roasting in Milas cuisine and the process of obtaining geographical indication. Reşit Özer said that çıntar roasting has been consumed in the region for centuries and therefore they started the registration process in 2021 thinking that it should be registered.
\nIt was registered on 25.10.2023 to be protected as of 15.04.2022 within the scope of Industrial Property Law No. 6769 by Milas Chamber of Commerce and Industry Chairman of the Board Reşit Özer.
\nSaying that they succeeded in obtaining geographical indication for Milas Çıntar Roasting; \"Çıntar mushroom, which grows in forest areas in Milas, reaches our tables with traditional recipes. The flavor of this dish comes from being cooked with olive oil with European Union geographical indication specific to Milas,\" he said.
\nExplaining the Çıntar Roasting Recipe, our chamber member Historical Mansion Restaurant master Ahmet Çevikgül shared the recipe of Çıntar roasting, one of Milas' local flavors, and said, \"Çıntar is a rare and delicious mushroom species growing in the mountains. Roasting made by cooking this mushroom in Milas is a dish with a very special taste. It is prepared with natural methods and preserves traditional tastes\".
\nÇevikgül also touched upon the importance of the ingredients and cooking techniques used in making Çıntar roasting; \"The ingredients of Çıntar Roasting are Çıntar, dry onion, salt, red pepper powder, and black pepper. After the dry onion is roasted, chopped Çıntars are added. After the spices are added, it is cooked on low heat for 30 minutes,\" he said.
