Milas Çaykama pastry, which is among the traditional tastes specific to Muğla Milas and received geographical indication registration, attracts attention with its unique recipe and flavor. While this pastry specific to Milas is a part of the local cuisine, it also finds a place for itself on gourmet tables.
\nIt was registered on 07.09.2022 to be protected as of 27.07.2021 within the scope of Industrial Property Law No. 6769 by Milas Chamber of Commerce and Industry Chairman of the Board Reşit Özer.
\nOur chamber member 4 Mevsim Börek Evi master Hande Ölmez, who makes this flavor suitable for geographical indication in Milas, shared the traditional recipe of çaykama pastry. Unlike others, this pastry is made without using phyllo dough. Wheat flour and corn flour are used in its dough. It is flavored with Kerdime (cress), köremen (wild leek), and kişkincik (coriander), which are herbs special to Milas. In addition, dalgan (nettle), dill, parsley, spinach, chard, beet leaves, leek, lettuce, kapçık, bird's heart, green onion, and sorrel herbs are used. One of the important details of Milas çaykama is that the dough is kneaded with strained yogurt and Memecik olive oil.
\nMilas Chamber of Commerce and Industry Chairman of the Board Reşit Özer stated that studies are being carried out to promote this special flavor not only locally but also internationally. \"When we went to Scotland last year, we took çaykama and tray pastry with us. It attracted the attention of everyone who tasted it. We are currently planning how we can carry this flavor abroad,\" he used the expressions.
